I love baking, but most of all, I love making unique cakes and cupcakes that you can not get just anywhere! This was a complete decorating experiment and I’m sooooo happy with how it turned out. My daughter drew a zebra print design on parchment paper, which I flipped over and then filled with coconut and toasted coconut. I then rolled the cake in the pattern. I can’t believe how well it worked!

8” coconut cake with an amazing coconut filling and lemon buttercream for a fresh twist. Coated and topped with more coconut!

It was a busy baking weekend! Here’s my first cake to share! It’s a 10” vanilla cake with raspberry lemon buttercream filling and cream cheese icing. Topped with donuts, meringues and some “ice cream” cupcakes.

Yesterday, I became the mother of a teenager! Yikes! To celebrate, my daughter wanted a cake with minimal icing, so this is what we came up with.

8” chocolate cake with layers of strawberry jam and strawberry whipped cream frosting as fillings. Topped with a drizzle of chocolate, chocolate-covered strawberries, and strawberry meringues. It was yummy!

This was a “just because” cake and I had full artistic freedom. The only request was egg free and use fruit.

So this is an 8” vanilla cake with blackberry buttercream filling and covered in lemon buttercream. Fresh strawberries and peaches were sliced and added to the middle as well as on top with a few blueberries. The fruit was glazed with a vanilla sugar syrup.
