Not the most beautiful photo in the world but this healthy, plant-based mac n' cheese was insanely delicious!! The main ingredients are cooked carrots, potatoes and nutritional yeast 😯🥕 You HAVE to top it with ketchup and cracked pepper!

Made my mom dinner the other night, and she loved it! We had sushi bowls with cucumber, tofu and edamame 🌿🥒 My mom has actually cut meat out of her diet recently, and really limits her dairy intake. I'm so proud 🙏🏼

All the vegan food at EnVie - A Vegan Kitchen with my family! I love how their minds and diets continue to evolve to a more healthy and compassionate lifestyle. My mom officially calls herself a Pescatarian, but eats predominately vegetarian! My husband eats a high veg-friendly diet and my dad even eats tons of vegetarian food. Just last week he made a massive vegan chilli. I'm so proud ❤
