I still get better crumb with my low hydration, but flavors have a difference, therefore I'm curious 🤨

I know I've complained and almost swore to never do high hydration, but we're curious creatures.
I don't like the idea of "I can't or won't", so I will and I can!
Playing around with high hydration is a mess.
Shaping is tough, because the blob wants CHAOS!
