This is one of those recipes that quietly turned into a holiday tradition in my family.

Croccante is Italy’s version of nut brittle and this is my slightly Canadian take on it using peanuts. It’s a holiday treat you have to make ahead… because it disappears fast. 🎄✨

Ingredients:
* 2 cups sugar
* 1/2 cup water
* 1/2 cup unsalted butter (1 stick)
* 1/3 cup light corn syrup
* 1/2 teaspoon baking soda
* 2 1/2 cups roasted salted peanuts
* Fleur de Sel or Maldon salt for sprinkling
* Candy thermometer

Method:
1. Line a baking sheet with parchment paper or a silicone baking mat.
2. In a stainless steel saucepan, combine the sugar, water, butter and corn syrup. Bring to a boil.
3. Cook over medium heat, stirring occasionally, until the mixture turns a light brown colour and registers 300F on a candy thermometer. This should take about 10 to 15 minutes. It is essential to use a candy thermometer here. The caramel must reach 300F — the hard crack stage — to set properly and achieve that perfect, crunchy texture.
4. Remove from the heat and stir in the baking soda. The mixture will bubble.
5. Stir in the nuts, then quickly pour the brittle onto the prepared baking sheet.
6. Spread the brittle into an even layer using a lightly-oiled spatula.
7. Lightly sprinkle with Fleur de Sel or Maldon salt.
8. Let the brittle cool completely (about 25 minutes) and break into large shards. The brittle should be stored in an airtight container and kept in a cool, dry place. Use parchment paper to separate layers of brittle to prevent them from sticking together.

🤎🤍Classic marble loaf cake brings together the best of both worlds: a rich chocolate ribbon running through a soft, moist vanilla base.
This recipe gives you that classic bakery-style texture with an easy method that never fails.

Ingredients:
* 1/4 cup butter, melted
* 1/4 cup of vegetable oil
* 2 cups all-purpose flour
* 2 tsp baking powder
* 1/2 tsp salt
* 1 cup sugar
* 4 eggs, at room temperature
* 1 tsp vanilla extract
* 2/3 cup buttermilk or Greek yogurt
* 1/3 cup cocoa powder
* 1/3 cup hot brewed coffee

Method:
1. Preheat oven to 350F and grease a 9×5 inch loaf pan.
2. In a bowl, whisk together the flour, baking powder and salt. Set aside.
3. Using an electric mixer fitted with the paddle attachment, beat the butter, oil and sugar until light and fluffy.
4. Add the eggs, one at a time, until fully incorporated. Add vanilla.
5. Next, add in the flour mixture in two batches alternating with the buttermilk. Mix until fully combined. Set aside half the batter.
6. In a separate bowl, whisk together the cocoa powder and hot coffee until smooth.
7. Add half the batter to the chocolate mixture and stir until fully incorporated.
8. Spoon the batters into the prepared pan, alternating spoonfuls of vanilla and chocolate.
9. Use an offset spatula or a knife to swirl the batters together.
10. Bake for 45-50 minutes, until a toothpick inserted in center of the cake comes out clean. Cool on a wire rack.

*Yield: One 9×5 inch loaf cake
