This is sourdough made from 100% freshly milled wheat. There is something so magical about this kind of bread made from freshly milled wheat. One small slice is so satisfying and I get zero bloating, and have no problems digesting it. This is nothing like store bought flour, even whole wheat flour from the store. One slice keeps me so satisfied all day. It turns out, freshly milled wheat impacts GLP-1 agonists, which mimic the glucagon-like peptide-1 hormone, acting on the brain to reduce hunger and increases satiety (feeling full).
The things we thought we knew about bread are not actually true, such as the bad rep about gluten and carbs. Milling organic wheat berries at home changes everything. You get 40/44 essential bioavailable nutrients when you mill it and use it immediately. This is not the hybridized, GMO wheat sprayed with glyphosates we have today, or the synthetic vitamins and folic acid that are forced into flour (mandatory in Canada!) or the whole wheat on the store shelf that has had the bran and wheat germ sifted out to keep it shelf stable. This is wheat as we were meant to eat it: stone ground minutes before mixing it into a dough and then slowly fermented and baked to perfection. After eating a hearty loaf like this, you won’t want to go back to white flour!
