Building strong 💪 dough before bulk fermentation is a big part of making a successful loaf of sourdough bread. If you can make a window…it’s a 🏆 win😍🤩 This bread will hold its shape if I do the next steps correctly with timing and temperature.

It is always challenging to add colour to my display. I feel like everything I make is brown. I mean brown = carmelization which is deeeelicious but makes for a monochromatic view. Our Moroccan Cookies are colourful, tasty AND are made with no gluten so pretty well anyone can enjoy the citrus flavours of these almond based cookies.
Three years ago we were in Newfoundland and I met a baker at the farmers’ market in St. John’s. We carried on our conversation through Instagram and traded a few recipes. She is from Morocco so this recipe is pretty legit! Thanks just sorry we didn’t connect again a few weeks ago when we were back in St.John’s.

This Mocha Croissant symbolizes 43 years with my 💕 By blending our two passions (besides each other of course!) we create something beautiful together. He roasts the coffee and I use it to infuse the chocolate and the butter. So basically chocolate and coffee wrapped in chocolate and coffee.

Megasauroissant, how could it not make you laugh?
I haven’t posted many pictures of myself. Not sure why. I guess all the beautiful people and posts scare me off. Let’s not delve too deeply into my lack of self whatever here. Anyway something happened while we were on our trip to Newfoundland that made the cyber powers that be wipe my footprint off the planet. All my social media gone. (Well except that at this point you can see my old AFB account on fb but I have no control over it) So? Let’s just take this as an opportunity to start fresh.
This Megasauroissant served 8 people an epic brisket sandwich, it made them laugh and started a whole meal of joyful conversation. An edible ice breaker you could say! Showing up at a dinner party after saying you will bring the croissants and then admit you only brought ONE and reveal this is pretty entertaining.
