Taste testing a 2-month old frozen cake

Taste test results
🍰 Overall taste remained the same. Still a delicious, classic all vanilla cake. It’s not freezer burned, stale, nor dry.
🍰 Texture is slightly different. But this has more to do with the cake not being fully room temp. How do I know? Because my buttercream wasn’t completely soft here.

The Verdict
✨Guests comments: “amazing”, “it’s phenomenal”, “is there more cake??”
✨I’ve tasted my cake at many different stages: fresh batter, refrigerated batter, room temp cake, cold cake, etc. Two months in the freezer, passes the test.

Fun fact: did you know some newlyweds freeze a tier of their wedding cake & save it for their 1st wedding anniversary??

So if you’ve ever doubted freezing a fully decorated cake, let this reassure you that you totally can!!

I froze a fully decorated cake!!

Story time 📖

I designed this cake in March, and hours before the event, it was cancelled due to an emergency.

I’ve heard of people freezing fully decorated cakes, and because this was my own family event, I took this as an opportunity for me to experiment. I was most curious how two months in the freezer would change its original texture.

Fast forward to this past weekend, I took the cake out the freezer 24 hrs before the event & attached it to a new cake board.

If you’ve ever wanted soft, gooey, extra indulgent cinnamon buns without starting from scratch… I GOT YOU.

I don’t have the patience to make any type of dough from scratch. So this is my tried and true method on elevating store bought Cinnamon Buns.

a few simple upgrades = a serious glow-up✨

RECIPE & INSTRUCTIONS BELOW ⬇️

Recipe:
• 1 can of large Pillsbury cinnabon rolls
• 1 cup heavy cream (half for the bottom of the tray and half for the top)

Sugar butter mixture:
• 1/4 cup, (57 gr) melted unsalted butter
• 1 tbsp cinnamon
• 1/4 cup brown sugar

Icing:
• Icing from the pack
• 1 tbsp (14 gr) softened butter
• 1/4 cup (57 gr) softened cream cheese
• 1/4 cup (30 gr) icing sugar
• 2 tbsps heavy cream
• A pinch of cinnamon

Optional: toasted pecans for a delicious crunch!!

Instructions:
1. Preheat oven at 350. Pour half the heavy cream in an 8x8” baking pan. Place the rolls in.
2. Whisk up the cinnamon sugar butter mixture; then pour over the rolls.
3. Pour the rest of the heavy cream over top.
4. BAKE at 350 for 25 mins.
5. Place the pre-made icing in a heat proof bowl & microwave for 20 seconds.
6. Combine the icing with the cream cheese, butter, icing sugar & heavy cream. Whisk together until smooth.
7. Glaze the icing over the cinnamon buns.
