👨‍🍳 BAKE WITH BREN… with a very special guest! 🍪

This week I’ve got Ethan joining me in the kitchen to whip up some of our delicious M&M Shortbread Cookies! 🌈🍪

Buttery, crumbly, loaded with M&M’s and super easy to make at home. Save this one for your next baking day! 👇

M&M SHORTBREAD COOKIES

Ingredients:
🧈 250g unsalted butter, softened
🤍 150g icing sugar
🌿 1 tsp vanilla bean paste
🌾 350g plain flour
🌽 50g cornflour
🧂 ½ tsp fine salt
🍫 200g milk chocolate M&M’s + extra for the tops

Method:
1. Preheat oven to 160°C fan-forced.
2. Cream butter and icing sugar for 2–3 minutes until light and fluffy.
3. Mix through vanilla.
4. Sift together flour, cornflour and salt, then add to the butter mixture. Mix until a dough forms.
5. Fold through the M&M’s.
6. Roll into 70–80g balls, slightly flatten and top with extra M&M’s.
7. Chill for 20–30 minutes.
8. Bake for 16–18 minutes until the edges are lightly golden.
9. Cool on the tray for 10 minutes and enjoy! 🤤

BAKE WITH BAKER BREN 👨‍🍳🍋🥥

You love it in store, now you can bake it at home! 🙌 Our Original Lemon Coconut Slice — soft, coconutty and finished with a sweet, zingy lemon icing. 🍋

For the slice:
🥣 140g self-raising flour
🥥 90g desiccated coconut
🤍 150g white sugar
🧈 125g margarine, melted
🥛 125g milk
🥚 2 large eggs
✨ 5g (1 tsp) vanilla extract
🧂 1g salt

Mix the flour, coconut, sugar and salt together. Whisk the melted margarine, milk, eggs and vanilla, then fold into the dry ingredients until just combined.

Spread into a lined 27.5 × 17.5cm slice tin and bake at 180°C conventional / 160°C fan-forced for 25–30 minutes until lightly golden.

For the lemon icing:
🍚 160g icing sugar
🍋 Fresh lemon juice, as needed

Mix the icing sugar with enough lemon juice to make a smooth, spreadable icing. Spread over the slice while it’s still slightly warm, allow to cool completely, then slice and enjoy!
