Something I've learnt along the way is to massage your batter in the piping bag. Do you do this? I've seen multiple bakers do this.
It eliminates large air pockets and gives a fuller shell. I wouldn't recommend this if, however, you've slightly over mixed your batter.

On another note, yes, I've been missing quite abit on here. It's been quite relaxing to be away. Not worrying about my next order 😄. We're enjoying beach days, watching sunrises, staying up late, playing board games, having deep conversations. It's the best!
