Feel like spicing up your life? I got this idea from Sophie Hansen’s book, “A basket by the door”.
Try a citrus simmer brew on your stove 😃 I mixed these left over grapefruit pieces from my G&T with some fresh bay leaves and rosemary from the garden and a few peppercorns and cloves from the spice rack. Pop your selection of peels, herbs and spices in a pot in the stove, 3/4 full of water and allow to simmer. Top up with water as needed. Perfect for days when you’re stuck inside and need some inspiration.

When life gives you limes... you make lime, gin and ginger marmalade! Thanks for the generous supply of limes

Here’s what I did ...
I read a heap of marmalade recipes; discarded all of them; decided to have a G&T and just make it up:
1.25kg limes thinly sliced, tops and tails squeezed and put aside for another use;
2 lemons 🍋 cut into 5mm cubes;
100g ginger peeled and chopped finely;
Place fruit and ginger in a bowl and cover with gin (about 2 cups) until you’ve finished your gin, had lunch and a chat with the neighbors over the fence and are ready for the next step.
Place the mixture into a large saucepan and bring to the boil; simmer until the fruit rind softens; add about 2kg of whatever random sugar you have available (I used a mixture of white and raw sugars) and 12.5g of pectin (my fruit had no pips in it, so I added some pectin to help thicken); continue to rapidly simmer until mixture becomes thick and syrupy; test consistency on a chilled plate in the usual manner.
Remember to taste it. I didn’t appreciate the bitterness of the mix, so I added 2 teaspoons of Celtic salt to tone it down.
Place jam into sterilised jars while hot and seal.
It was delicious on the fish Mr Bradford cooked, and on our hot crossed buns. but I really like this creation.

Cleaned out the crisper and found some baby beets 😍 They were yummy for dinner last night as a warm roast salad.
I peeled and quartered them, and covered with a generous coating of olive oil,flaked sea salt, and sprigs of rosemary. Placed the whole lot in Aluminium foil and sealed the foil. Baked in a hot oven until they were tender, then finished them off with some balsamic vinegar and back in the oven with the Aluminium foil open.
We served ours on a bed of wilted spinach (dry pan fried), with goats cheese, roasted pumpkin and blanched beans. So yum!
