Every loaf at Croft Lane starts long before the dough is mixed.
I spend a lot of time thinking about grain.
The wheat berries I mill each week aren’t chosen at random. Different varieties bring different flavours, colours and baking characteristics.
At Croft Lane, I work with a blend of hard white wheat, hard red wheat and Khorasan wheat to create a flavour profile that is uniquely our own.
Some grains bring sweetness.
Some bring depth.
Some bring a richer, nuttier character.
By milling whole grains and blending them carefully, I’m able to build flavour from the very beginning.
Because great bread starts with great grain.
