Every loaf at Croft Lane starts long before the dough is mixed.

I spend a lot of time thinking about grain.

The wheat berries I mill each week aren’t chosen at random. Different varieties bring different flavours, colours and baking characteristics.

At Croft Lane, I work with a blend of hard white wheat, hard red wheat and Khorasan wheat to create a flavour profile that is uniquely our own.

Some grains bring sweetness.
Some bring depth.
Some bring a richer, nuttier character.

By milling whole grains and blending them carefully, I’m able to build flavour from the very beginning.

Because great bread starts with great grain.

After days of feeding starter, mixing dough, stretching, folding, shaping and waiting patiently for fermentation to do its work, this is the moment everything comes together.

The oven spring.
The colour.
The aroma filling the room.

Every loaf we bake starts with simple ingredients and time.

No shortcuts.
No rushing.

Just traditional sourdough made the way it has been for generations.

Every loaf starts long before the dough is mixed.

At Croft Lane, freshly milled whole grains are becoming an increasingly important part of our baking process.

Rather than relying on a single grain, we’re developing our own blend of carefully selected wheat varieties, chosen for the flavour, character and baking qualities they bring to each loaf.

Every grain contributes something different.

Some bring sweetness.
Some bring depth.
Some bring strength.
Together, they create a loaf that’s uniquely Croft Lane.

It’s a slower way of baking, but that’s what artisan baking has always been about — paying attention to the ingredients, respecting the process, and creating bread with genuine character.

Because great sourdough doesn’t begin with flour.

It begins with the grain.

Hi, I’m Elisha — the baker behind Croft Lane Sourdough.

A few years ago, I started baking sourdough at home because I wanted to slow down and understand the food I was feeding my family.

These days, life is wonderfully busy with two young twin daughters keeping me on my toes, but baking remains one of my favourite weekly rituals.

What began as a hobby has grown into Croft Lane Sourdough — a small micro bakery focused on traditional sourdough made with quality ingredients, long fermentation and freshly milled whole grains.

I’m passionate about whole grains and the incredible flavour they bring to bread. Each week I mill grain fresh for my loaves because I believe great bread starts with great ingredients.

I bake once a week, in small batches, by pre-order only. It’s a model that allows me to focus on quality over quantity, reduce waste, and ensure every loaf is baked with care.

In a world of mass-produced food, Croft Lane Sourdough is my way of keeping things simple.

Flour.
Water.
Salt.
Time.

This month we’re baking something special.

Sun-dried tomato and rosemary sourdough, crafted with 25% freshly milled wholewheat flour and naturally fermented over time.

The sweetness of sun-dried tomatoes, the savoury aroma of rosemary and the depth of flavour that comes from freshly milled grain create a loaf that’s made for winter tables.

Perfect alongside soup, toasted with good butter, or simply enjoyed on its own.

Small batch.
Stone baked.
Made the traditional way.

A new chapter for Croft Lane Sourdough.

We’ve welcomed a stone mill into the bakery.

Wholegrain’s already play an important role in all of our sourdough — and over the coming months, we’ll begin exploring freshly milled grains in selected bakes to bring even more depth of flavour, texture and character to our bread.

Milling flour fresh before mixing is one of the oldest traditions in breadmaking. Slower, more hands-on, and something we’re excited to explore carefully and intentionally.

Still the same Croft Lane sourdough.
Just evolving deeper into craft.
