Bit of a different angle for this shot today and an insight into something new to come.

I’m working on something for you, the home cook. A guide to turn your everyday kitchen into one that’s vibrant, fresh, seasonal and sustainable. A way to convert your pantry from commercialised to handmade, use up your food waste and become more in tune with your local food system.

While I have thoroughly enjoyed feeding you sweet goodies over the past year, I’m even more excited about this new direction and in helping nurture a more sustainable future.

These photos (featuring the first steps of cultured butter making) were taken whilst filming some content for my new Homemade series. Stay tuned for more insights, recipes, stories and as always really delicious food.

Attention lemon lovers, let’s talk lemon curd 🍋
If you’re as in love with lemons as I am, you’ll completely agree that the store bought version just doesn’t cut it and frankly doesn’t even deserve to be called lemon curd.

Making it yourself is so SO simple! I mean it. This batch was made last weekend in a 10min zoom cooking demonstration…easy right? I’ll pop a recipe up later this week but feel free to message me if you just can’t wait.

In our house we’ll make a batch when we’ve got lemons laying around because they’re a great way to use up the entire ingredient (zest and juice). Another favourite “use it all” is dehydrating lemons. Talk about flavour bomb! Infuse teas, cocktails or store for later when you don’t have lemons on hand, a little goes a long way.

Such a great way to celebrate jam!
Taking the recipe in my own hands I added crystallised ginger, did a mix of my homemade mandarin marmalade and used up the last of the cherry jam (previously seen in my lamingtons).

I now have the perfect excuse to make more jam 😅

The back story…
I’ve been locked up inside working all day. Thought perfect, for lunch I’ve got some epic pickles and fresh sourdough. Add in a bit of sunshine and that’ll get me through Friday.

One thing I forgot was how much of a heartbreaker this little guy can be. Waiting patiently for me to sacrifice some of my long awaited lunch and melt at the sight of those big brown eyes.

They call it puppy love.

Lockdown project… pickling just about everything in the house.

A mix of pink peppercorns, mustard seeds, thyme, fennel seeds and star anise were used in the pickle of these fantastic sweet and tangy cumquats, homegrown in my Uncles garden.
