Sri Lankan Curry Powder.
The first steps of many to make
🛖Chicken Sri Lankan Curry

Cumin, fennel, peppercorns, ground mustard seeds, star anise, cardamom, rice, ground coriander seeds.

Pan fry rice till brown. Make sure you don’t burn it. Add remaining spices, on a medium low heat, let cool and blend.
Keep in an air tight jar till required to use.

The Black Porsche signifies the beginning of Ryan and I’s relationship. Where Ryan spent years building a 69 911 Porsche and I spent hours watching in the first years of our relationship. Hence why our first born is called Porscha.
✨The Star is Poppy’s star, that we look for each night, knowing Ryan’s Dad is watching over us and the kids take time to remember him.
🪶The birds are a representation of Chase’s free spirit his love for life and forever chasing him down.
🛖 The Hutch is well our home. But our last born who has made our house complete and has a fascination with food. In particular cake 🙌🏽

🛖Pork Belly🛖

If you don’t get it right, you don’t get it right. It’s a rubbery crackling and it’s devastating in the food feels.
But I’ve been doing this first step for years and it seems to work a treat.
It’s all about the first 25-30mins.

Once you’ve patted dry your to be delicious crackling, rub salt into it and then rub some more.

Put your oven, the hottest it can go, once the light goes off it’s go time.
🛖
Add your pork belly for 25-30 mins or till your crackling has blistered some.
🛖
Remove from oven, then pour 1 cup of milk……yes milk! To the base only, don’t pour over the top! Repeat do not pour over crackling. Add 3 sliced garlic cloves, 2 teaspoons of fennel seeds and 5 sage leaves.

Turn oven down to 160’ and cook for a further 2 hours till cooked.
🛖
If your crackling isn’t there yet, don’t stress, put under a medium grill for about 20 mins.

Simple- Quick- Tasty

1 cup Oats
2 Eggs
2 overripe banana’s
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract

Blend all ingredients and pan fry.
They are delicious and kids can make these which is even better.

Hearty Minestrone Soup!

Packed with veggies, chorizo and bacon. I love the bejeezus out of this soup.

🛖1 onion diced
🛖 4 garlic cloves minced
🛖 1 chorizo diced
🛖 250gms bacon diced
🛖 1 zucchini diced
🛖 1 carrot diced
🛖 1 cup of diced celery
🛖 1 cup of diced beans or peas
🛖 1 cup/can super sweet corn
🛖 1 cup/ can butter beans
🛖 1 can of diced tomatoes
🛖 1 cup of slow roasted capsicum
🛖 1 teaspoon of ground cumin
🛖 1 teaspoon Guajillo chilli powder (or paprika instead)
🛖 1 cup of Kale sliced.
🛖 4 cups of chicken stock

METHOD
Sauté, onion garlic, chorizo and bacon in some olive oil.
Add celery, beans zucchini and carrot. Sauté for 5 then make a well in middle and add cumin and chilli powder. Coats ingredients and then add stock and tomatoes with 1 1/2 cups of water. Stir then add remaining ingredients. Simmer for 1 hour. I add some pasta towards end. And simmer for 15mins till cooked.

This freezes well and is great for flasks in kids lunches. Enjoy!

This was originally a recipe for beef brisket and by all means you could do so but I love beef cheeks! Usually not a fan of slow cookers and prefer to slow cook my meals in an oven or on the stove in a cast iron pot if time permits. A stew or casserole seems to taste better that way and I find these dishes in a slow cooker can actually start to taste the same. But this recipe is not in that category. Enjoy! It’s my most requested recipe and if you get the balance right, it’s a winner.

🛖Vietnamese Beef Cheeks

🛖4 beef cheeks
🛖1 onion sliced
🛖3 garlic cloves minced
🛖4 teaspoons of ginger minced
🛖1 red chilli diced
🛖 2 stalks of lemon grass
🛖 2 fresh kaffir lime leaves- I used lime slices instead
🛖 2 star anise
🛖 1 cinnamon stick
🛖 2 tablespoons of grated palm sugar
🛖 1/4 fish sauce
🛖 1/4 Soy sauce
🛖 3 cups beef stock

Add all the above ingredients into a slow cooker on low for 9 hours.
Serve with rice and some Asian greens. It’s delicious!

I’ve had a friend mention that they use the remaining juices as a base to a soup after, adding noodles and some shredded chicken.

🛖Homemade Oat Muesli Bars 🛖

My daughter went through a stage but now it’s not a stage. It’s no packaging in her lunch box 🤦🏽‍♀️ Although this a great thought and being aware Of her impact on the environment. It’s made extra work for me.
Benefits - the kids are eating healthier.
This recipe is easy and take about 5 minutes to make.

1 cup of oats
1/2 cup dried fruit (your choice)
1/2 cup shredded coconut
1/2 cup GF SR Flour
1/2 cup choc chips
1/4 cup brown sugar
2 eggs
1 teaspoon vanilla essence
1/4 cup honey or agave nectar
150gms melted butter or coconut oil

Mix all together. Bake in a rectangular tray for 25 mins at 160’

Cut into bar size and eat! Don’t wrap in plastic though!

Apple Sage Butter
Roast Chicken

This is a simple but easy dish. Great for a Sunday roast and if there is any left overs, it’s good for school lunch sandwiches.

🛖Handful of Sage
🛖5 Garlic cloves
🛖50 gms of butter cubbed
🛖 1 Apple sliced.

Stuff the chicken with apple, sage and garlic cloves. Add about 4-5 cubes as-well.

Pull skin back from chicken to create a pocket then push remaining butter into everywhere you can. This is life changing for a roast chook, it makes it so succulent.

Roast at 160’ for 1 2/2 hours depending on size of chook.

Side note- we recently got chickens, this is not one 😂🤣

🛖Protein Brownies.🛖

These feed the whole family, I use protein powder and I always get questions about whether it’s ok to feed protein powder to kids.
I’m not a dietitian, I can’t offer expert or educated advice but I often use protein in my baking and the amount that they consume is minimal. If you are concerned you could always speak to an expert but also look into a Kids protein powder.

🛖Recipe Below
- 3 eggs
- 1 teaspoon vanilla Essence
- 120ml olive oil
- 90gm Honey
- 80gm Flour
- 80gm Brown Sugar
- 90gm choc chips
- 2 scoops chocolate protein powder
- Handful of white choc chips

🛖Method
Whisk wet ingredients, set aside
Combine all dry ingredients except the choc chips
Combine and wet and dry ingredients, fold in dark chocolate chips. Pour into a tin and sprinkle white choc chips. Bake for 15 minutes at 160’

🛖Sticky Date Pudding🛖

This is my recipe, it’s definitely not traditional but it uses real ginger, a sweet chai tea and tea blend from and it adds a whole new level of flavour!

🛖RECIPE & METHOD IN ORDER OF MAKING

Preheat oven to 160’

Add
- 2 cups of pitted dates
- 1 teabag of bush black tea
With 1 2/3 cup of water to a saucepan and bring to boil. Let simmer till dates are soft, remove from heat and add
- 1 tablespoon of fresh finely grated ginger
- 1 1/2 teaspoon bicarbonate soda
Stir quickly as it will bubble and froth whilst breaking down the fibres in the dates. Let sit.

Combine
- 90gm butter
- 1 cup of caster sugar in a mixer till pale .
Add
- 3 eggs, one at a time.
Add both
- 1 1/2 cups self raising flour
- 2 tablespoons of sweet chai blend
Stir to combine. Mixture will seem runny but this is perfect. Add to a cake tin, bake for 50-60mins.
Remove, whilst still warm poke holes with a metal straw and pour over caramel sauce.

🛖Caramel Sauce
- 150gm butter
- 1 1/4 cup brown sugar
- 1/3 cup honey
- 3/4 cup cream.
Add all to a saucepan till melted and keep stirring to becomes sticky. Pour over sticky date.

Serve straight away or put in oven for 30 mins before serving. Enjoy!
