Last night you saw one of our clever bakers moulding up some cobbs, well after spending the night in the fridge, a few hours in the proofer and about half an hour in the oven here is the final product. The rye Sour Cobb is one of our personal faves and we’re sure if you give it a go you will too!!!

One of our very clever bakers moulding up two cobbs. Moulding yo cobbs, especially two at a time is an art that is taught to all our apprentices and takes some time to master!!!

A couple of grain sour Vienna’s, moulded up ready to go in the fridge to be baked off tomorrow. Over night retarding adds to the flavour giving the sour dough more time to mature.
