Pear & Walnut Hot Cross Buns
A little wonky (in shape :D), a lot delicious - these fluffy, moist buns are filled with chewy dried pears,
toasted walnuts, and
warm spice. Rustic, sticky, and better than anything from a packet.
Save for easter baking!!

Blueberry Lemon Bundt Cake

A buttery, rich bundt cake packed with blueberries and a zesty lemon glaze-perfect for any occasion!

You'll Need:

1 ½ cups unsalted butter, room temp
1 ½ cups sugar
6 large eggs, room temp
1 Tosp vanilla extract
1 tsp baking powder
¼ tsp salt
½ cup buttermilk, room temp 2 ¾ cups all-purpose flour
2 cups blueberries (fresh or frozen)
Zest of 1 lemon
Blueberry Lemon Glaze
1 ⅓ cups fresh blueberries
Juice of 1 zested lemon
¼ cup icing sugar

How to Make It:

Preheat oven to 175°C. Butter & flour a 9-10" bundt pan.

Cream butter & sugar for 5 min until light & fluffy.

Beat in eggs, one at a time, then mix in vanilla, baking
powder & salt.

Alternate adding buttermilk & flour, mixing until just
combined. Fold in blueberries.

Bake for 20 min, lower temp to 160°C, and bake another 70
min until golden & domed.

Cool in pan for 15 min, then invert onto a rack.
Muddle blueberries & lemon juice, strain & mix with icing sugar to make a thick glaze. Drizzle over the cooled cake.

Tip: Don't slice until ready to serve-keeps it moist!

The perfect roast for a weekend feast! Juicy, flavourful pork belly with golden crackling skin—made in Gourmet Pro Oven.
Save this for the ultimate porchetta roast!
Ingredients:
2-3kg pork belly, skin on
40g salt
10g black pepper
20g chilli flakes
5 garlic cloves - grated
Zest of 1 lemon
180g parsley leaves
Potato pure and Rocket parmesan salad (optional), to serve
How to make it:
1 Butterfly the pork belly & season with salt, pepper, chilli, garlic, lemon zest & parsley.

Roll it up tightly & tie it with butcher's twine.

Chill uncovered overnight.

Prick the skin, rub with olive oil & roast at 180°C for 1.5
hours.
Turn up the heat to max for 30 mins for extra crispy golden
brown skin!
Rest 20 mins., slice & serve with rocket & parmesan salad.

The Creamiest Tiramisu You'll Ever Make Layers of coffee-soaked ladyfingers, velvety mascarpone cream, and a dusting of cocoa.
Here's how to make it:
You'll Need:
• 4 egg yolks
• 100g sugar, divided
• 175ml heavy cream
• 225g mascarpone
• 415ml espresso or strong coffee
• 1 tbsp bourbon
• 2 tbsp cocoa powder
• About 24 ladyfingers
Method:

Whisk egg yolks with 50g sugar until pale and thick.

In another bowl, whip cream with the remaining sugar until soft peaks form, then mix in mascarpone. Fold into the egg yolks.

Mix coffee and bourbon in a shallow dish.
Dust a 2L dish with cocoa powder. Quickly dip ladyfingers
in the coffee and layer them in the dish.
Spread half the mascarpone mixture over the ladyfingers.
Repeat with another layer.
Dust with cocoa, cover, and chill for at least 4 hours
(overnight is even better!!).
Save this for later & tag me if you try it!

Quick, crispy, and loaded with flavor! 🍕 Calzone with punchy homemade tomato sauce & spicy salami—ready in minutes, devoured even faster. 🔥

Roasted Tomato Sauce:
800g small tomatoes
8 cloves garlic, peeled and crushed
45 ml (3 tbsp) olive oil
1 tbsp dried oregano
Salt and pepper, to taste
Pinch of chili flakes (optional)
Pinch of sugar (optional)

1. Preheat oven to 220°C (425°F).
2. Place tomatoes and crushed garlic in a baking dish.
3. Drizzle with olive oil, season with oregano, salt, pepper, and add basil (if available).
4. Roast for 25–30 mins, stirring halfway, until soft and slightly charred.
5. Blend roasted tomatoes and garlic until smooth with all its juices. Add chilli and adjust seasoning.
