Blueberry Lemon Bundt Cake
A buttery, rich bundt cake packed with blueberries and a zesty lemon glaze-perfect for any occasion!
You'll Need:
1 ½ cups unsalted butter, room temp
1 ½ cups sugar
6 large eggs, room temp
1 Tosp vanilla extract
1 tsp baking powder
¼ tsp salt
½ cup buttermilk, room temp 2 ¾ cups all-purpose flour
2 cups blueberries (fresh or frozen)
Zest of 1 lemon
Blueberry Lemon Glaze
1 ⅓ cups fresh blueberries
Juice of 1 zested lemon
¼ cup icing sugar
How to Make It:

Preheat oven to 175°C. Butter & flour a 9-10" bundt pan.

Cream butter & sugar for 5 min until light & fluffy.

Beat in eggs, one at a time, then mix in vanilla, baking
powder & salt.

Alternate adding buttermilk & flour, mixing until just
combined. Fold in blueberries.

Bake for 20 min, lower temp to 160°C, and bake another 70
min until golden & domed.

Cool in pan for 15 min, then invert onto a rack.
Muddle blueberries & lemon juice, strain & mix with icing sugar to make a thick glaze. Drizzle over the cooled cake.
Tip: Don't slice until ready to serve-keeps it moist!
