Birthday and name-day celebrations, special occasions, and get-togethers in the Balkans are not complete without baked goods or pastries of some kind, and without any doubt, the most popular would be Kifli.

Kifli, kiflice, kifla, kifle or kipferl is a traditional bread roll baked throughout Central and Balkan Europe. Kifli are commonly rolled and formed into a crescent, which is rumoured to be the inspiration for the French croissant.

Kiflice is filled with either savoury or sweet fillings or sometimes served plain. The most popular fillings include:
- Cheese (in VVKs case, the tastiest vegan cheeses, of course)
- Jam (strawberry, blackberry, plum or apricot)
- Chocolate hazelnut spread

Who loves Maznik?

Maznik is a firm family favourite and a dish that never lasts for more than 10 minutes once it reaches the table.

Maznik is a traditional Macedonian swirl pastry, made of thin kneaded dough, filled with feta cheese (vegan of course), spinach, leeks or mushrooms and then rolled in a swirl form. It's very popular, like zelnik or burek.

VVK's first platter!!!

It's definitely not Vesna's first time putting together a beautiful and delicious spread of sweets, but we wanted to share that VVK's first platter is being shared tonight.

The platter was made for Mitrovdan, an Orthodox holiday dedicated to Sveti (Saint) Dimitrija of Solun (Thessaloniki).

What's on the platter, you ask?

- Almond, Coconut & Hazelnut Vanilice
- Oraščići
- Šape
- Fig balls
- Various flavoured oblandi

These sweets or kolači are trendy in Croatia, Serbia, Macedonia and Bosnia & Hercegovina. Let us know by commenting below if you've had any of these kolači before and which are your favourites.

Palačinke 🤤

Palačinke (or crepes) are a firm favourite of most Balkan nations. Similar to the French Crêpe, Palačinke are commonly filled with jams, chocolate spreads, yoghurt or simply with some lemon and sugar. Have them as an indulgent breakfast or dessert after dinner.

Ingredients

Wet:
- 500ml water
- 1 teaspoon of sugar (we use unrefined coconut sugar)
- 1/2 teaspoon salt (or a good pinch)
- 20g vanilla sugar (or a teaspoon of vanilla paste)
- Zest of one lemon (optional)
- 3 tablespoons of vegetable oil

Dry:
- 350g plain flour (you can use other flours but be aware it may change consistency, so add more or less water)
- One teaspoon baking powder

Method:
- Mix all of the wet ingredients and then add the flour and baking powder. Let the mixture sit for at least 30 minutes.
- After 30 minutes, check that your batter has a thick but runny consistency; otherwise, add more water or flour. It should be like a wet pancake mixture.
- Heat a skillet (or any non-stick fry pan that you can easily pick up with one hand) over medium heat.
- Lightly oil the pan. We use a bamboo cloth to coat the pan and take away any excess oil evenly.
- Pour one ladle (1/2 cup) of batter into the middle of the pan and swivel the pan so that the batter is thinly coating the entire pan. Flip after 1-2 minutes (or lightly golden)
- This should make eight-twelve Palačinke (depending on consistency), and should serve 3-4 people.

Our favourite way to eat Palačinke is to spread some hazelnut chocolate spread (Pana chocolate spread works a treat) with some strawberries and roll up or fold as you like.
