It all started many years ago when I realized I was always the one to “bring cake!” Bringing the cake provided so much joy, not only in the designing, baking, decorating but in the smiles and enjoyment cake brought to family and friends that I baked for. This obsession turned into the creation of Pastry Lane. Hi my name is Lana, owner and creator of Pastry Lane based in Ferntree Gully, Melbourne.

Such a simple recipe when wanting to make choc chip cookies. What makes these irresistible is their cute little size.
The diameter of the piped shape should be approximately 2cm. Do not flatten after piping. You can make them even tinier or larger. Cooking time will vary of course if you change size.
I’ve added this recipe to my repertoire for when I want choc chip cookies. Feel free to like or save to keep them in yours.

Choc Raspberry Sourdough loaf to start a Sunday with. . If you’re a sourdough girlie sub out some flour for sieved cocoa when making your bread. When it’s time to shape sprinkle some brown sugar, chopped up dark chocolate & raspberry onto your rectangle on bread and roll up.

Bread scoring and making us really such a beautiful therapy. I’ve been making bread with the sourdough starter I created for two and a half years now. And have baked every single week since whether it be for my family or my customers.

If you order your loaf no later than early Thursday morning to allow me the time to make, ferment, bulk ferment & then bake your bread fresh in Saturday morning for your pickup.

Worth a try!
SOURDOUGH DISCARD POP TARTS

250g flour
5g salt
10g sugar
225g cold butter, grated
200g sourdough discard
10g white vinegar

Mix altogether in stand mixer with dough hook You’ll notice there is no
liquid in this recipe.
This is normal. The amount
of butter is what will bind this together.
Once dough is formed. Divide in 2. Wrap with cling film & refrigerate at least an hour. I did mine overnight. 
Roll into two rectangles. Cut into even rectangles. I made 12. Add fillings choice.

Strawberry jam
Or
Brown sugar
Cinnamon
1 tsp flour 

crimp edges with a fork to in case the filling in your pastry. Brush with egg Wash and bake at 1:80° for 15 to 18 minutes until lightly brown..
While still warm top with your icing.
For the pink ones I added a drop of my strawberry jam into the icing with a drop of milk to form a thick paste.
For the cinnamon ones, I added a little bit of cinnamon into my icing sugar with a drop of milk to form a thick paste and then drizzle or brush on the top of your pop tarts and allow to cool if you can wait that long.
they are best eaten fresh so if you think you won’t be eating them all within 2 days feel free to freeze and bake as you need. You can even pop your icing sugars in Ziploc bags and freeze those as well so that you have everything on hand when you next bake.
I loved this recipe. I will definitely be making these again as a sweet treat for my family.
