It all started many years ago when I realized I was always the one to “bring cake!” Bringing the cake provided so much joy, not only in the designing, baking, decorating but in the smiles and enjoyment cake brought to family and friends that I baked for. This obsession turned into the creation of Pastry Lane. Hi my name is Lana, owner and creator of Pastry Lane based in Ferntree Gully, Melbourne.

I’ve been using this cake as a staple base recipe and it works beautiful with all seasonal fruit. This version was made with sour cherries. They were lightly folded in to the cake, baked and then drizzled with a cherry syrup. The top of the cake drank some of that beautiful thick red velvety syrup which allowed the flavour to pe*****te even deeper into the cake.

Recipe ⬇️
125g butter
1/2 cup sugar
2 eggs
2 TBS oil of choice (olive oil)
2 TBS Greek yogurt
1 1:2 tsp baking powder
1 cup plain flour
Fruit of choice (I used canned sour cherries, 1/2 can drained) reserving the rest for decoration

Beat butter, adding sugar and beating until creamy. Add eggs one at a time filled by remaining ingredients. Leaving fruit till last and only folding them in.
Pour into line tin with baking paper and bake at 1:80° for about 40 minutes or until cooked

To make syrup if using. Add the liquid of the canned cherries into a saucepan with three-quarter cup of sugar allowed to simmer until syrup forms then add in some of your reserved cherries. Use this to decorate your cake..
Alternatively, you can make a simple glaze with icing sugar and lemon juice or milk, depending on fruit you are using.

Greek Pita Bread for Souvlaki Recipe ⬇️

300ml warm water
Satchet of yeast, 7gm
1tsp sugar
500g flour
1 1/2 tsp salt
2 TBS olive oil

Mix warm water with yeast and sugar. Cover and allow 5 minutes to foam.
Add flour. Salt & olive oil.
Knead 5 minutes . Cover with plastic wrap and allow to double in size 1 hour.

Divide into 6 balls and roll out into rounds

Brush with olive oil and fry until little pockets form.
Enjoy with your souvlaki or with dips.

Had this in Athens once and it has stuck with me. I would’ve never had thought if this combinations but it truly works. Syrupy carrot sweet spoon with Greek yogurt. So easy. So good.
