Nuni Cakes &c. by Dors Koon A one-woman show. An obsession leading to nutritious + gorgeous creations. The end. I hope that you appreciate my creations. It is a constant work in progress.

Whether bespoke or retailed, the ingredients used are always and only ever gluten-free + whole foods, preferably certified organic and locally sourced. My affair with gluten- and dairy-free cooking and baking began when my daughter was diagnosed with eczema at the age of 1 and a half. Choosing a holistic approach to treat her condition, gluten and dairy were the first ingredients taken off the men

u. As she was still being breastfed at the time, I was to radically change my diet too. Back then, it was impossible to find desserts and cakes that were delicious, appetising as well as fit our new dietary requirements which also entailed organic whole foods. I decided then and there that there was absolutely no way that my little Aki would be going through childhood or life without eating cake! So, I did my research, tried and cried, and tried again until some very tasty things finally started to take shape. Nuni Sweet Treats was born from an intention and a desire to produce sweet treats that I consider good enough for my own daughter to eat - with both nutritional and aesthetic value.

Chocolate sponge drizzled with sour cherry compote/syrup, and layered with almond crème pâtissière and vanilla bean Chantilly cream. Enrobed in chocolate Swiss meringue buttercream and topped with handcrafted cookies, macarons (outsourced) and fresh berries.

Deliciousness guaranteed in the form of cupcakes:
• Banana Sundae

As well as cake:
• Carrot-pistachio & Orange (with curd)

Leeroy = not vegan but loves his vegan girlfriend the most: “These are vegan???… massive rousing success with those cupcakes… just imagine like fifteen girls opening the lid to the cupcake box […] for a small moment I was a superhero”

Anna = not vegan but is the hostess with the mostest catering for her vegan guests: “… The cake was amazing! So delicious and plenty to eat over the next few days 🤭”

One of the lucky ones who got to taste-test: “That Black Forest was the best I’ve had of your cupcakes!”

The vegan range is small but packs a punch! Near perfection…

•• XERES’S “DRY + FLAVOURLESS” SALTED CARAMEL CAKE ••

Sponge cake made with organic coconut nectar sugar for that natural caramel flavour and also spiked with house-made salted caramel sauce to be sure, to be sure. Then, layered with mascarpone Chantilly cream, sweetened with Grade A maple syrup. And finally, enrobed with Swiss meringue buttercream flavoured with Master Blend vanilla extract AND organic vanilla bean paste. As per request, styled à la with a handmade Minecraft-inspired “8” sugar cookie.

A disappointing experience, no doubt about it. But, I stand by all my recipes (and my taste buds), which have been worked on for well over a decade. A lot could be said here but let’s put it down to “personal taste preferences and differences”.

•• Coco's 'Seaside' Birthday Cake ••

This show-stopping, dairy-free Strawberry + Cream number boasts layers of vanilla Genoese sponge cake with crème pâtissière, strawberry compote and fresh strawberries, and finished with a Swiss meringue buttercream.

I would normally use blue natural food colour but I had ran out. So, it was a butterfly pea flowers infusion with freeze-dried blueberries for the sea instead. And, a mixture of their pink + lemon yellow for that peachy tint in the house-made sugar seashells.

A new design to add to my repertoire here. Mum Carrie recounted that they didn’t want to cut the cake because Coco loved the look of it so much (win)! And then, they were glad they did because nomnomnom.
