People often think a fudgy brownie just means soft.

But that’s usually where it goes wrong.

A really good brownie should cut cleanly and hold its shape, with a smooth, dense centre that softens as you eat it. If it doesn’t hold when you slice it, it’s not really doing the job.

After years of working with brownies, especially for sharing and delivery, we’ve found this is what people actually come back for. Not softness on its own, but something that works properly from the first cut.
