🌰 chef ricardo draws inspiration from his japanese heritage and love for Japanese pâtisserie for this month’s choux special, berry mont blanc choux: filled with earl grey crème montée, vanilla-rum chestnut pieces, silky chestnut sauce, and blackberry jam, finished with mascarpone cream, chestnut paste, and crisp almond meringue.

warmth of chestnut is paired with delicate earl grey notes and the bright acidity of blackberry, for a balanced and elegant flavour profile.
