We look very carefully at the quality of our ingredients and, as much as possible, use ingredients in their most natural state. We choose ingredients that are unadulterated, unprocessed and are without unnecessary additives. Breads and Modern Ingredients…
Valuing more complex flavours and character is the reason we make our breads the traditional way. We only use flour, water, sal

t and yeast or a sour dough starter. We do not use any ‘improving’ ingredients, such as sugar, malt flour or vitamin C to speed up the proving process. We are much more interested in slowing this process down. To this end, we use only a small amount of yeast in our yeasted breads and give our doughs a longer time to ripen which contributes significantly to the flavour, texture and distinctive character of our bread. We are driven primarily by clean flavours and use fresh, local, seasonal ingredients, as well as traditional methods of production. We make our pastries and cakes with unsalted butter, real eggs, pure cream and zest unwaxed lemons for our tarts, candy our own peel and use Belgian chocolate. We have created a range of preserves, slices, biscuits and other pantry essentials. These are stocked at all of our stores and are available at many good food stores through Australia.

Ingredients available in Armadale this Mothers Day weekend! 💕🌸

Recipe for this starter:

🛒 Ingredients

- 1 stracciatella 250g, I like
- 1 tin good anchovies 48g
- 300g baby tomato medley
- 5 sprigs fresh basil (or 1 tabs fresh marjoram leaves)
- I red pepper, roasted and peeled
- Olive oil
- Vinaigrette

🥣 Method

1. Drizzle a little Olive oil on the whole pepper, roast 180c for 30 mins or until charred and skin peels off easily. Halve, discard seeds and stalk, cut into strips, season with a little salt
2. Wash and halve or quartered the tomatoes
3. Remove basil leaves from stalks
4. Place tomatoes in a ring around the outer edge of a serving plate, make a space in the centre. Fill this with the stracciatella and flatten
5. Lay the pepper strips over the top of the cheese in horizontal lines
6. Lay the anchovies in vertical lines
7. Sprinkle the basil over the top or place around the edge of the ring
8. Drizzle about 1-2 tabs vinaigrette over the tomatoes and a little salt and pepper
9. Serve with slice Phillippa’s Pane Toscano, can be fresh or toasted

This recipe is part of Phillippa’s Mother’s Day dinner series! Begin with the Pane Toscano with Dressed Stracciatella, move on to the Roast Beef Fillet with Basil Herb Salad and Phillippa’s Spiced Nuts, and end here.

🛒 Ingredients:

- 150g fresh plain goats curd cheese, slightly salted, i.e Fresh Chevre
- 7 tbsp cream
- 1-2 tbsp sugar, depending on taste
- 5g Vanilla paste with seeds, or 1 tsp vanilla essence
- 100g Phillippa’s Almond Fennel biscotti
- 1 tbs strongly flavoured honey, (I use Coastal Peppermint)

Poached Plums

- Plums 800g, about 10
- ½ cup sugar
- 1 cup water
- Peel of 1 orange
- 1 cinnamon stick

🥣 Method:

1. Quarter plums, simmer in sugar, water, orange peel and cinnamon about 20 mins or until soft and mushy. Strain and Cool, reserve syrup.
2. Blend goats cheese, vanilla, 1-2 tbs sugar to taste, and cream to a smooth, soft consistency, refrigerate.
3. Crumb biscotti by pounding with a rolling pin or using a blender until fairly fine.
4. Spoon plums into a serving dish, making a hole in the centre. Spoon cheese mixture into the centre.
5. Liberally sprinkle the biscotti crumbs over the top. Drizzle with honey.

Serve room temp or chilled, handing around for everyone to serve themselves.

(Reserved syrup can be added to sparkling water with a squeeze of lemon 🍋)
