~ Double Chocolate Cake ~

Got an opportunity to make this lovely cake for a friend’s birthday and i was given free rein on how it looked and this is how it turned out! I really enjoyed making this and if i had to describe the look i was going for it’d be a chocolate forest-y look, the wooden chocolate bark cage and the fallen berries!

~ Layer Breakdown ~

Chocolate Cake Layers with Chocolate Ganache and Nutella sandwiched in between. Covered with Chocolate cage with a bark effect and Fresh Berries on top! 🍫🍰

~ Challah ~

✨ Challah is so much more than just bread. The tradition of challah is a very spiritual one; for observant Jews, it is a way to directly connect with the spiritual energy of God. Traditionally, challah is served on Shabbat and holidays. ✨

In ancient times, challah referred to a small bit of dough that was set aside for the Temple priests as an offering to God.

This was my first time baking Challah and i really enjoyed the process! It was way more easier than I anticipated and i actually recommend that you try making Challah if you haven’t before. 💯

I did mess up on two accounts though
- the amount of yeast (should’ve used a little less)
- Proofing time (i left it way too long to proof)

Other than that this recipe was *chef’s kiss*. If you do have any leftovers you can easily make french toast or bread pudding out of it as the bread does have a slightly sweet and rich flavor.
(Also, i realized a little late that traditionally Challah isn’t cut off with a knife, instead it is torn apart along the strands of the braid)

~Recipe~
Ingredients
1 cup warm water
1 tbsp Active Dry Yeast
1/3 cup Sugar
3 1/2 cups flour
1/4 cup oil
1/2 tsp salt
2 tbsp oil
Method
- Just mix all of the ingredients (except salt) together in a bowl into a shaggy dough. (Shaggy- Loose sticky)
- At the end add your salt and knead for a minute or so
- Add some oil and leave it to prove for an hour.
- After it’s proved, knock down the dough and knead it a little.
- Portion it and braid it as you desire! (Makes two loaves of challah)

~ Apple Tart ~

Let’s just start with me making a small declaration- I really don’t like apples nor do i like apple based desserts 🥴
BUT i did have some leftover pastry dough that i wanted to use up and the only filling that i could come up with what i had laying around was an Apple Tart 😕 sad i know. But lucky for me i have a lovely friend who loves Apple Tarts and let me just tell you, once this was baked I really contemplated not giving it to her and just keeping it for myself 🤭
I mean it actually tasted good, I was genuinely surprised. Now, it could either be that my tastebuds are ‘developing’ or that I’ve finally learnt to make a decent apple tart XD
Which one do you think it is? Are you a fan of Apple Tarts?

🔸🥥Coconut Island🥥🔸

coconut mousse || orange gelèe || chocolate soil || pistachio crumble

This idea has been brewing in my mind for a long time now and I finally managed to get the image my brain had conjured, up on a plate! 😋
The chocolate soil was made by adding to chocolate chunks, sugar and water that’s just about to caramelize and whisking it quickly, such that the chocolate melts and seizes soon after to give you the soil like texture! ✨
The chocolate balls when cut through, have a coconut mousse and an orange jelly center.
I tried exploring a couple of new techniques with this dish and was pleasantly surprised with how it turned out! 🤤

Spaghetti Aglio E Olio is an Italian dish made by slightly sautéing minced garlic and chili flakes in olive oil and tossing the spaghetti in it. That’s how simple it is! 🍜

I’ve been desiring to make a pasta dish for a while and then stumbled upon this recipe on instagram by Life of Simple Treats
This recipe is perfect for anyone who wants to have something light or wants to keep away from the other heavy pasta dishes!

Definitely a recipe I would recommend for the pasta lovers to try out. 🍝

🎂 PLUM CAKE 🎂

As winter comes to an end, i have an essential that’s known to keep you warm and certainly helps you relive those Christmas Vibes.
For those of you who don’t know, Plum cakes are a type of fruit cake.
Traditionally the preparation for Plum Cakes begin months before Christmas, wherein dried or fresh fruits are soaked in brandy or rum and are left to infuse. The aroma of the cake is honestly so rich and intoxicating that it’s a memory my mom associates with her childhood!
As a kid she grew up around a Christian Community and Christmas was always a grand affair with the most delectable treats - Nevris, Kalkals, Marzipans, Shankarpali and of course Plum Cake!

So this time of course we baked one right at home, obviously without the alcohol though!
But she definitely approved of it and so did everyone else who managed to grab themselves a slice! It really was as close to the real thing as I could get!
If you’re a fan of plum cake or know anyone who is, I really recommend you try out this recipe, from Hebbar's Kitchen!
Oh and it’s eggless too!
No Alcohol or Eggs!
